Other types of the caviar include Almas Caviar, Sterlet Caviar, Kaluga Caviar, Baerii or Siberian, White Sturgeon Caviar (caught from Eastern Pacific Ocean), Daurenko, Platinum.

A single spoon full of caviar contains about 15% of selenium, and 11% of magnesium and iron required by the human body.

A single sturgeon fish can go through 6 cesarian operations for the extraction of eggs!

Previously, the methods of harvesting were different. Because nowadays, the sturgeon species are endangered, so the cesarian is performed in order to best utilize a single fish. A single fish can tolerate up to 6 cesarean sessions after a break of a certain period. During the harvesting process, sex of the fish is recognized first, which is unable to know by the physical characteristics, so the ultrasound is used on fish of 3 years old to analyze internal sex organs (testes and ovaries). Sophisticatedly, when the fish turns 6, several biopsies are performed following each year with the help of flexible sampling straw, which is inserted into the abdomen of the fish and the eggs are pulled out to examine whether they have reached the maturity or not.

To check if the eggs are mature enough for the further process, they are taken between the fingers and pressed and squeezed. If the eggs are even in size, firm, and about 3 mm in diameter, they are good to go with. If in case, they turn out to be white and small in size, they need some more time to get matured.
